We use only eel from Isshiki, Aichi.This region has over a century of eel-farming tradition.Raised with the pristine waters of the Yahagi River, the eel grows in an environment as close to the wild as possible.
It is the only eel farm in Japan using natural river water.

We employ the Kansai-style "Jiyaki" method, grilling the eel from raw without the steaming process typical of the Kanto style. Crisp on the outside and savory, moist within, this method brings out the exquisite flavor of our premium eel.
Blending traditional rich tamari soy sauce with Mikawa mirin, our meticulously aged sauce elegantly enhances the natural flavor of the eel.
